Install thunderbird and thunderbird-fr 2. Run thunderbird 3.
Here it's seems working. (cauldron installed this week with the netinstall) What happens if you rename your .thunderbird in .thunderbird.old ?
With thunderbird renamed to .thunderbird.old, interface is now in french as expected ...
So the next question is now : where is defined the language of the interface in .thunderbird directory ?
I don't know, somewhere :) but there is maybe an issue with the update, so let keep this bug open, and if nobody (or you) can reproduce with thunderbird 10 or later we can close.

In fact, language pack is installed as extension in /usr/share/mozilla/extensions. I looked to add-ons manager in thunderbird and found the language pack. Strangely, it was disabled. After enabling and restart of thunderbird, everything is OK. The reason why it was disabled is unclear : it was OK in previous versions. Anyway, I think you can close the bug. Thanks a lot for your support !
ok, feel free to reopen :)
