Description of problem: After running update-grub2 , grub-mkconfig , grub2-install etc. grub still loads in command line mode. I can load the menu using "configfile (hd0,msdos1)/grub2/grub.cfg" at startup, but it is not ideal. Note that it started happening after i uninstalled many packages - accidentally. just in case for grub2 is grub2-mkconfig , you mention grub-mkconfig, if is a typo ignore my comment have you tried with the mcc wizard?
