The schema seems to be present on the system:
[guillaume@beria ~]$ rpm -ql gsettings-desktop-schemas | grep privacy
/usr/share/glib-2.0/schemas/org.gnome.desktop.privacy.gschema.xml

Probably a post-installation import procedure didn't work, but apparently it's not part of the gsettings-desktop-schemas package.

What's the output of:
$ rpm -qa glib2.0-common

glib2.0 2.75.2 was removed from the mirrors. Please downgrade to glib2.0 2.74.5, and test again.

I found the thread on dev mailing-list, I just didn't make the connection. It fixes the issue, indeed, so I'm closing the ticket.
